Simple Superfood Buckwheat Pancakes
INGREDIENTS
* Recipe serves 2
2 cups buckwheat flour
2 bananas mashed
2 tbs of chia seeds (soaked in 4 tbsp water for 2-5 mins to make 'chai egg')
1.5 - 2 cups of coconut milk or your choice of nut milk (for a creamier texture can use coconut cream)
Pinch of salt
1/2 tsp aluminium free baking powder
1 tsp vanilla bean (optional)
1 tsp Edible Gratitude Vital Force
DIRECTIONS

In a large bowl, add buckwheat flour, baking powder and salt. Whisk to combine and set aside.

In a separate bowl, add banana and mash. Prepare the chia egg in a separate bowl (as per ingredient list). Then add vanilla extract (optional) and chia egg and whisk to combine. Then add non-dairy milk and whisk to combine.

Add the wet ingredients to the dry ingredients and gently fold mixture together. It should be thick but pourable. If too thin, add more flour. If too thick, add a splash of non-dairy milk.

Heat a large pan over medium heat. Add coconut oil the pan.

Once hot, add mixture, one teaspoon at a time to make desired sized pancakes. Cook on each side for roughly 2-3 mins.

Add desired toppings.
