Superfood Buckwheat Pancakes


* Recipe serves 2

2 cups buckwheat flour

2 bananas mashed

2 tbs of chia seeds (soaked in 4 tbsp water for 2-5 mins to make 'chai egg')

1.5 - 2 cups of coconut milk or your choice of nut milk (for a creamier texture can use coconut cream)

Pinch of salt

1/2 tsp aluminium free baking powder

1 tsp vanilla bean (optional)

1 tsp Edible Gratitude Vital Force


  • In a large bowl, add buckwheat flour, baking powder and salt. Whisk to combine and set aside.

  • In a separate bowl, add banana and mash. Prepare the chia egg in a separate bowl (as per ingredient list). Then add vanilla extract (optional) and chia egg and whisk to combine. Then add non-dairy milk and whisk to combine.

  • Add the wet ingredients to the dry ingredients and gently fold mixture together. It should be thick but pourable. If too thin, add more flour. If too thick, add a splash of non-dairy milk.

  • Heat a large pan over medium heat. Add coconut oil the pan.

  • Once hot, add mixture, one teaspoon at a time to make desired sized pancakes. Cook on each side for roughly 2-3 mins.

  • Add desired toppings.
